The Hythe, Dinner at Revel Lounge
During our stay at The Hythe, we dined at Revel Lounge for dinner. Revel Lounge is where après culture thrives with their hand-crafted cocktails & their après inspired cuisine with Colorado flair. Our server Bria had the sweetest demeanor and made us feel right at home.
I started with a Cowboy Downhill cocktail made with tequila, cardamaro, lime juice, pomegranate, and agave. I loved this cocktail (so much so, I went back the following day for another) - it was refreshing and had a lovely spiced cinnamon rim that added a sweetness to each sip.
The Prosciutto and Burrata Salad was made with arugula, preserved black walnut, fig jam, pistachios, & aged balsamic. This was the best burrata I've had in a while. The cheese was cool and milky; it paired beautifully with the salty prosciutto, sweet jam, & bitter arugula. The texture variation of this dish was top notch: silky cheese, fluffy greens, the delicate chew of cured meat, sticky jam, & the crunch of nuts. I could go on, but I digress, do not miss out on the Prosciutto and Burrata Salad!
The Revel Raclette Epicurean Experience was made with elk tips, griddle smash potatoes, & gremolata. The piping hot raclette was served over the elk & potatoes right at the table. The melty cheese was salty & thick and made for epic cheese pulls. The salty cheese complemented the tender, gamey elk and soft, buttered potatoes.
The Pretzel was served with spicy mustard & beer cheese sauce. The pretzel was massive, hot, soft, & generously salted. The beer cheese was my favorite for dipping.
The Grilled Artichokes were served with lemon butter & Revel aioli.
