The Hythe, Breakfast at Margie's Haas
During our stay at The Hythe, we dined at Margie’s Haas for breakfast. Margie’s Haas menu offers elevated home cooking as a tribute to the World War II local home cook, Margie Haas, who welcomed soldiers from the 10th Mountain Division into her home.
The Chicken and Waffle Sandwich was made with buttermilk chicken, pickle, & maple hot honey. These cutie breakfast sandwiches had sweet, savory, & tangy elements. The mini-Belgian waffles were fluffy & sweet. The fried chicken had a lightly crisp coating with a juicy interior. The salt and tang of the pickle cut through the richness of the chicken and waffle.
The Colorado Miner's Omelet was made with smoked brisket, hatch chili, chorizo, cheddar, and pepper jack cheese, served with toast and herb roasted potatoes. The Colorado Miner's Omelet was my favorite - a hearty and flavorful dish! All the ingredients were delicately wrapped in perfectly cooked, fluffy eggs. The brisket and chorizo provided a smoky and savory base that was balanced by the heat of the roasted peppers from the Hatch chili and creaminess of the cheese.
The Baked Blueberry Skillet for 2 was made with baked blueberry pancakes, butter, maple syrup, & mascarpone whipped cream. A brunch masterpiece! This decadent pancake was massive. Due to the baking method, the pancake was crisp around the edges with a densely, fluffy interior. The thick pancake had a generous number of juicy blueberries throughout that burst in our mouths with sweet tartness. The rich mascarpone whipped cream added a touch of elegance.
