Deviation Distilling
Raise a glass & toast to Christmas cheer! Deviation Distilling is the perfect spot to unwind with elevated cocktails and gather for the holidays. We visited Deviation Distilling over the weekend and enjoyed numerous house specialty drinks and spirits - WE HAD THE BEST TIME.
We made our way through Dairy Block & arrived at Deviation Distilling. Deviation Distilling had a warm and inviting ambience with exposed brick, copper and barrel accents, and amazing bottle lighting. It was an elevated yet cozy atmosphere that made us want to stay awhile.
We had the pleasure of meeting the owner of Deviation Distilling - Bob Wiley - during our visit. Bob exuded passion for his distillery and he explained everything we experienced and tried in depth. Bob made true gin believers out of us and certainly secured us as frequent Deviation Distilling patrons. The mixologists behind the bar were crazy talented and blew us away with each & every cocktail they created. I will order every single drink we had again in the future.
Deviation Distilling has a second story room that is the perfect spot for an intimate party or event gathering. This is where we made ourselves comfortable. Then it was time to begin our craft cocktail & artisan spirit journey!
The Colorado Campfire is made with Mocha Whiskey, Campfire Simple, Bitters, and a Hickory Smoked Glass.
WOW. This cocktail was indulgent & a smooth sipper. The mocha whiskey had flavor notes of vanilla, caramel, and brown sugar - the aftertaste was toasty, marshmallow sweet. The hickory smoked glass integrated a lovely aromatic component to this drink as a whole.
The Colorado Campfire is the perfect fit for a cozy nightcap; what I like to call a liquid dessert!
The Barrel Aged Old Fashioned is made with Barrel Aged Spice Trade Gin, Orange, Maple, and Pecan Bitters.
This Old Fashioned knocked my socks off - hands down the best Old Fashioned I've had to date. The barrel aged gin took on a dark caramel color - it looked exactly like a whiskey Old Fashioned yet it was made with Deviation Distilling's Barrel Aged Spice Trade Gin. I have never had an Old Fashioned that went down this flavorful yet smooth; my very last sip had the same authority and balance as the first. The spiced gin and pecan bitters provided spice on the front but finished in pecan & maple notes. The orange garnish gave off a delightful citrus fragrance making this an elegant drink.
The Blood Orange Flip is made with Blood Orange Gin, Orange Blossom, Tiki Bitters, Whole Egg, and Soda.
The Blood Orange Flip cocktail was a superstar; the orange blossom made for a great ingredient. The citrusy sourness of the blood orange & orange blossom livened up the richness of the gin. The eggwhite added a sinfully delicious frothy texture to the top. SO. GOOD.
We had the Gin Flight which is ½ oz taster of their award-winning gin (Citrus Rosé, Mountain Herb, Spice Trade).

Deviation Distilling had a menu of Small Plates that we ordered from while we enjoyed our incredible drinks. We had the Large Charcuterie Board which came with 3 meats, 3 cheeses, and a variety of accouterments.

The Cucumber Basil cocktail is made with Mountain Herb Gin, Lemon, Cucumber, Sweet Basil, and Soda.
The Cucumber Basil was a refreshing cocktail - light & bright. The fresh juices from the muddled cucumber and sweet basil made for a crisp, fragrant aroma. Easy drinking!
The Zinfin Bourbon Old Fashioned is made with Bourbon finished in Zinfandel Cask, Angostura, and Demerara.
The aging in the Zinfandel Cask gave this bourbon rich flavor and a pleasant finish. I initially tasted whipped cream & caramel - the caramel coming from the Demerara - and then the taste faded into fruity, velvety vanilla. Another brilliant Old Fashioned.
