54thirty, Le Méridien Denver


During our staycation at Le Méridien Denver, we had a nightcap at Le Méridien’s rooftop bar, 54thirty. 54thirty is Denver’s highest open-air rooftop bar.

54thirty welcomes guests on a first-come, first-serve basis and guests can be put on the wait list via the 54thirty host in the lobby of Le Meridien Hotel.

We arrived at 54thirty and were seated out on the balcony in the open-air lounge. 54thirty was a vibe - the music was bumping (GOOD music), drinks were flowing and guests were having a blast. There were panoramic views of the mountains and grey patio chairs for us to kick back & relax in.

The hostess Maria & our serve Brittany were dolls; both of them made sure we had everything we needed during our time at 54thirty. The place was super busy and Brittany was taking care of all of her tables with a smile & speedy service.

We started off our night with Craft Cocktails. I had the Hibiscus Sunrise and the Rooftop Garden.

The Hibiscus Sunrise is made with tequila, hibiscus reduction, lemon & orange essence.

This cocktail had a floral essence from the hibiscus that sat soft on the tongue while the citrus of the lemon & orange essence brought acidity and tartness to the drink. This was a refreshing cocktail over all.

The Rooftop Garden is made with gunpowder gin, genepi, matcha, lime & celery shrub.

I really liked this sophisticated cocktail. The gunpowder gin was thick on the palate with herbaceous flavor notes while a touch of unexpected savory brine was brought on from the celery shrub (it lingered on the tongue).

For Savory Shares we had the Wagyu Short Rib Tacos and the Guacamole & Chips.

The Wagyu Short Rib Tacos are made with ancho chile, pickled onion, & cotija.

Talk about a boujee taco, these were amazing. The shredded wagyu short rib meat was rich in flavor. The cool cotija cheese highlighted the meatiness of the juicy, seasoned wagyu.

The Guacamole & Chips are served with House ancho-chili salsa (we added queso to our chips order).

For Sweet Shares we had the Key Lime Pie.

The Key Lime Pie had a cold, creamy filling & a crumbly graham cracker crust; the perfect summer night treat.
