My HelloFresh box came with 3 meals - Southwest Shrimp Tacos, One-Pan Greek Spaghetti and Presto Pesto Panko Chicken. Each meal comes with all necessary ingredients (aside from basics like oil, salt, pepper etc.) & step-by-step instructions on how to make them.
Time to HelloFresh dinner right up!
I decided to start my HelloFresh cooking with the Southwest Shrimp Tacos:
Prep - I washed and dried the produce which included a lime, red onion, roma tomato and poblano pepper. I zested and quartered the lime. I sliced and minced the onion. I finely diced the tomato. I sliced the poblano into strips.
2. Marinate Shrimp - I rinsed the shrimp under cold water and then in a medium bowl, tossed them with southwest spice and a squeeze of lime juice. I then set them aside to marinate.
3. Make Pico De Gallo - I combined the minced onion, tomato, lime zest and a squeeze of lime juice then seasoned with salt & pepper.
4. Cook Veggies & Shrimp - I heated a large drizzle of oil in a large nonstick pan and added the sliced onion and poblano pepper. I added salt & pepper to the veggies and cooked them (stirring occasionally) for 7 minutes until they were browned and tender. I transferred my veggies to a plate to use the same pan for the shrimp. I added another drizzle of oil to the pan and cooked the shrimp for 4 minutes until they were opaque and cooked through. I then stirred in the remaining lime zest and juice from the lime wedge with the cooked shrimp.
5. Finish & Serve - I warmed the tortillas in a damp paper towel in the microwave and then divided them out on a serving block. I then filled the warm tortillas with the shrimp, veggies, pico de gallo , sour cream & hot sauce. ¡Comamos!
I am not the most talented in the kitchen & HelloFresh made cooking the tacos easy & fun. What's more, the tacos were amazing!
