Cook Street School of Culinary Arts
Put on those aprons Denver! Cook Street School of Culinary Arts offers numerous cooking classes giving you the chance to sharpen your skills in the kitchen.
We arranged for a private cooking class with some of my favorite Denver influencers & we couldn't wait to see what Cook Street School of Culinary Arts had us cooking up.
We arrived at Cook Street School of Culinary Arts (located in downtown Denver off of 9th Avenue) and headed inside. There was ample metered parking right across the street. Cook Street’s space is beautiful & modern with an open floor concept making it a fabulous spot to really engage with everyone in the class.
Maddie Devico was our coordinator for the evening and she was such a doll! She arranged our entire itinerary for the event, ensured the class ran smoothly, set a lovely table, and made sure our wine glasses were topped off. Chef Barry, the Chef de Cuisine, and Chef Pam, the Chef Instructor, were our teachers for the night. Both were so friendly, patient and were great instructors overall. They led us through the cooking class with their passion for food, cooking & plating.
It was time to get started - we would be making Ravioli for our entrees and Cannolis for dessert! We donned our aprons and headed into the kitchen.
Chef Barry started us off in the kitchen by showing us how to make ricotta cheese. Barry heated milk and salt in a large saucepan until the curds and whey seperated. He stirred frequently to prevent burning. Barry then poured the mixture into a prepared colander where the whey drained from the edges of the cheese.
Chef Pam was up next to teach us how to make homemade pasta for the raviolis. Chef Pam made the pasta making fun! We were put to work & it was a delicious way to connect with everyone while making it.
We mixed flour & salt to start to then poured it on the table. We then cracked and whisked an egg. Next up we made a well in the center of the flour and poured the whisked egg into it.
We let the egg sit for a minute and then began whisking it with a fork, slowly bringing the flour from the edges of our well into the mix. We whisked with our forks little by little in order to not grab too much flour and not have our egg spill out.
Once the egg and flour began to amalgamate for a sticky dough, we went to using the cutter to continue to mix and then began using our hands to knead.
Following kneading, we rolled the dough into balls, covered it in plastic wrap and left it for 30 minutes to sit.
While the dough was left to sit, we headed back to the table for some charcuterie which Maddie kindly set up for us as a snack. This was a great little break because making the pasta was making us hungry!
Once our dough was ready, Chef Barry showed us how to use the pasta machine.
We kneaded our pasta dough into a flat oval like shape before dusting it with flour & sending it through the pasta machine several times.
Chef Barry used green veggie leaves to press into his ravioli pasta dough to make lovely green accents.
Once we had rolled our pasta was all rolled out, we added in spoonfuls of creamy ricotta. We then cut the pasta dough and layered the cut half on top of the ricotta and other half of pasta. We then cut circles out of the dough using dough cutters and crimped the edges around the ravioli to keep all that chees-ey ricotta goodness inside.
To cook the pasta, we brought a pot of salted water to a boil and added the ravioli in. We cooked the ravioli for 2-3 minutes (once they were floating at the top) and then pulled them out of the pot with a spider strainer & plated.
The raviolis were plated with a beautiful orange butternut squash puree. Kenzy plated our group's raviolis with ricotta & red pepper flakes.
Then it was time for the cannolis! Chef Pam showed us how to decorate the edges of the cannolis with melted chocolate and toppings & then filled the cannolis with chocolate chip cream filling. YUM.
Bon appétit - it was time to enjoy our handmade meal. Hats off to the proper chefs & all of us newbies!
