Who has the best dumplings in Denver? Hands down Cholon. What is one of my favorite restaurants in Denver? Hands down Cholon. Their French Onion Soup Dumplings are unrivaled and they will have you coming back for more.

We were seated in the main dining room. Cholon's aesthetic is sleek Southeast Asian fusion.

Arianna was our server - she was fantastic and the best server we've ever had at Cholon.

For Small Bites we started with the French Onion Soup Dumplings, Butternut Squash Crystal Dumplings and the “General Cho’s” Soup Dumplings. All of the dumplings are 'must orders' when dining at Cholon.

These dumplings are a Chinese dish with French flair. They had so much flavor and were filled with piping hot, indulgent French onion broth & gooey gruyere cheese. Each order comes with 4 dumplings and I always down 2-3 orders of these like nobody's business (they are THAT good). SINFULLY delicious & so addicting - you can thank me for the recommendation later. Word of advice to make sure the entire dumpling goes into your mouth before biting into it - otherwise broth shoots across the table (Ross is stellar with this mishap lol).

The Butternut Squash Crystal Dumplings are seasonal and come with a Truffle Emulsion sauce.

The butternut squash dumplings had a savory and sweet taste (somewhere in between starch & vegetable). They were delicately textured bites stuffed with gorgeous winter flavor. & the truffle emulsion sauce was *chef's kiss* - a fine dining delicacy.

The “General Cho’s” Soup Dumplings are made with Chicken.

These dumplings were great comfort bites - they brought the heat temperature wise as well as spice. The spice from the soup filling was hot with nice tang.

For Main Plates we had the Miso Glazed Salmon. The Miso Glazed Salmon comes atop Baby Bok Choy and is dressed with Cucumber-Jicama Relish.

The Salmon was solid - the miso glaze marinade & Cucumber-Jicama Relish added fresh flavor to the fish.

For Dessert we had the Pear-Persimmon Sorbet. The Pear-Persimmon Sorbet is served with Jasmine, Pickled Lotus Root, & Crispy Tapioca.

The Pear-Persimmon Sorbet was a refreshing, light treat after such a heavy meal.

Take note that Cholon rarely seats on time (even with a reservation), so if you're in a time crunch making early dinner reservations at Cholon is key. The kitchen & bar get very busy (especially during the weekends) and that backs things up quickly.
