The Bindery
The Bindery invited denv.her. in for Happy Hour and we were V excited to check out this modern market & American eatery - especially since they just refreshed their HH menu for summer!
The Bindery is located in LoHi (Denver hot spot) and has 55 complimentary, covered parking spaces reserved for their restaurant in the parking garage attached to their building. FIFTY FIVE!!! You guys, that's like unheard of in LoHi and generally finding parking anywhere in the highlands is a nightmare; so needless to say, the Bindery knows what's up and parking can be the least of your worries when dining here #tenfreakingpoints
I am high-key obsessed with The Bindery's airy ambiance. The vaulted ceilings, the large windows giving way to an enormous amount of natural light, and the white accents give this place a high-end fresh and spacious feel.
General Manager - James, and Server - Caleb, took great care of us and made sure we had everything that we needed while we ate some small bites and had our cocktails!
Caleb started us out with a Cocktail du Jour wich was a vodka cocktail made with watermelon and a lemon garnish.

For bites, we ordered the Half Dozen Oysters Raw, the Potato, Chorizo, & Manchego Croquets, the Grilled Baby Brie, & the Thyme Baby Back Ribs
The Half Dozen Oysters Raw were aaaaaaamazing. I love me some oysters and these babies were fresh & smooth - salty at first taste and then gave way to a subtle sweetness. Everything a good raw oyster should taste like & we loved the presentation on this round bed of pebbles.
We inhaled these oysters and next time we go back, we're definitely getting a dozen!
The Bindery also offers oysters Rockefeller style or Beet Migonette style - & if you're really big oyster fans like we are - The Bindery offers a “buck a shuck” oyster special from 3-5pm every Friday #countuswayWAYin.
The Potato, Chorizo, & Manchego Croquets with Saffron Aioli were a great twist on a classic croquets app - we had never had croquets made with chorizo or paired with a saffron aioli before!
We loved the colors of this plate with the toasty orange croquets and the yellow aioli (the saffron gave the great color here!). The chorizo made the little balls have a nice salty flavor, the manchego nutty, and the saffron aioli had a subtle mayo-ey garlic flavor that paired great with the fried app overall.
The Grilled Baby Brie is topped with pickled blueberries, honey, and arugula and come with sourdough toast. The Brie had a wonderful nutty flavor profile which nicely complemented the tart and fresh pickled blueberries.
This is a great bites plate to share between 3-4 people as the Grilled Brie is a generous helping! OR - you can eat it all by yourself lol - because let’s face it, who doesn’t like Brie? #gimmedatbrie
The Thyme Baby Back Ribs are coated in a thick chestnut honey and their outside is nice and crispy.
These ribs are savory, sweet and sticky goodness - definitely a decadent bites plate, good for sharing.
If you make it to The Bindery on a Thursday from 3-5pm, the restaurant offers complimentary snacks and $4 drinks which is an amazing deal.
